A peptide called EASPKPV was isolated from ginkgo seed protein and found to block ACE, an enzyme that raises blood pressure. The peptide binds tightly to the ACE active site through multiple molecular interactions and also chelates zinc ions, and importantly it retains this activity after passing through simulated digestion. These properties make EASPKPV a promising natural ingredient for functional foods aimed at managing high blood pressure.
